In the heart of South Philadelphia Chef Juan Carlos, alongside his family, are taking the initiative to craft their own kitchen in order to reclaim the shattered connection with Mexican gastronomy.

At El Chingon Chef Aparicio will infuse his expertise in French baking and Mediterranean cooking techniques with the Mexican kitchen. The provinces of Mexico are brimming with astonishing dishes, El Chingon will take you on a journey around Mexico. Exploring authentic Mexican flavors, from the streets of Mexico to family dinner tables, El Chingon Philadelphia thrives to encapsulate it all in one dining experience.

Our baking program will be focused on the chef’s own hometown and it’s most infamous dish, the staple of Puebla City, “Cemitas”. Traditionally filled with avocado, Milanese, Quesillo, and Papalo. While preserving the traditions of Mexican food and culture Chef Juan Carlos wishes to bridge the world of modern cuisine with the indigenou ways of Mexican-Aztec cooking, our beginning project being the unique sourdough flour tortillas.
